Chicken Fried Chicken

Ingredients:
1 lb Red Bird Farms Ground Chicken
1 tsp salt
1 tsp pepper
(add any additional seasoning of your choice)
1 cup all purpose flour
2 eggs (whipped)
1 cup Panko bread crumbs
4 oz. Angel hair pasta: cook pasta according to package.
Directions:
Mix ground chicken and salt and pepper in bowl. Make four ¼ lb patties. Coat each pattie with flour. Dredge in whipped eggs. Coat with panko bread crumbs. Heat skillet with ¼ inch olive oil and fry.

Chicken Cranberry Meatloaf

Ingredients:
2 lb. Red Bird Ground Chicken
¾ cup flavored cheese croutons
2 cups cooked wild rice mixture
4 oz. sour cream
4 oz. cream cheese
2 Tbsp. minced garlic
½ tsp. each ground coriander, curry powder, cinnamon and crushed dried thyme leaves.
1/3 cup fresh cranberries, washed and coarsely chopped
1 Tbsp. frozen orange juice concentrate
2 Tbsp each red and yellow bell pepper, minced
1 Tbsp. extra virgin olive oil
½ yellow onion, chopped
Add to chicken: bread crumbs, rice, cream cheese, sour cream and spices. Mix well. Saute onion, peppers and garlic until golden. Remove to medium bowl. Place chicken mixture, sautéed vegetables, cranberries and orange juice in bowl mixing gently to blend well. Place in baking dish. Bake in preheated 350 degree F. oven for 55 minutes. Serve with cranberry sauce and remaining reheated rice.

Southwestern Ground Chicken Salad
Southwester Ground Chicken Salad
1 pkg Red Bird Ground chicken (skillet cooked and chilled)
1 pkg prepared mixed salad
1 cup chopped avocados
½ cup chopped olives
½ cup chopped tomatoes
½ cup shredded cheddar cheese
½ cup chopped green onions
½ cup chopped red onions
Toss all ingredients with Ranch dressing or your favorite salsa to taste.

Mexican Burgers
1 Lb Fresh Red Bird Farms Ground Chicken
1 egg
½ cup finely chopped cilantro
1 jalapeno pepper, finely chopped
1 tsp. each; salt, tequila
¼ tsp each; ground red pepper, ground black pepper
8 slices sourdough bread
1 each, sliced tomato, avocado
Salsa, mustard, sour cream
Combine ground chicken, egg, cilantro, chili, onions, salt, tequila and ground peppers in large bowl. Mix gently. Divide into four patties. Grill patties. Grill until internal temperature of burgers reaches 165 degrees F. Toast bread lightly on grill. Place 2 toast slices on each of four plates, top one of the slices with a burger. Top burger with avocado and tomato slices. Serve with salsa, mustard and sour cream.

Lazy Loaf Ground Chicken

1 LB. fresh Red Bird Ground Chicken
1 cup of your favorite spaghetti sauce
1 cup Italian Bread crumbs
1 egg
Mix well, cover and **refrigerate overnight. Bake at 350 degrees for 1 hour. Four Servings.
**Refrigeration optional for more enhanced flavor.

Chicken Cheese Burger
1 Lb. fresh Red Bird Ground Chicken
1 medium onion, finely chopped
1 teaspoon paprika
1 teaspoon chopped red chili
¾ cup bread crumbs
1/3 cup sour cream
2 tablespoons chives
4 - ½ ounce slices of Cheddar cheese
1 clove of garlic, crushed
Sauté onion in a frying pan with a little oil. When golden, remove onion and drain on paper towel. Using hands mix together in a bowl the chicken, onion, paprika, chili, bread crumbs, sour cream, and chives. Add a dash of salt and fresh ground pepper.
Divide the mixture into 4 equal portions. Shape into balls. Press a piece of cheese into the center of each ball and round the mixture completely enclosing the cheese. Flatten the balls to make patties. Heat Olive oil in frying pan. Add garlic. When mixture is foaming add patties. Press with spatula to flatten. Cook over medium heat until internal temperature of chicken reaches 165 degrees F.

Chicken Taco Recipe
1 Lb. Fresh Red Bird Ground Chicken
1 teaspoon cumin
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon ground chili peppers
Taco shells, shredded lettuce, diced tomatoes, shredded cheddar cheese, sour cream and salsa as desired. Additional suggestion, serve with refried beans.
Directions:
Brown chicken and season in a medium skillet until done. Chicken is done when juices run clear. Place chicken mixture in heated taco shells with your choice of toppings.

Backyard Burgers
1 LB. Fresh Red Bird Ground Chicken
2 teaspoons OLD BAY seasoning
Directions:
Combine ground chicken with Old Bay. Mix gently. Shape into four patties. Grill until burgers reach internal temperature of 1645 degrees F., turning once.
Alternative:
Combine ground chicken with 1 teaspoon garlic salt and 1 teaspoon black pepper. Shape and grill. Top with a little bit of shredded cheddar cheese to melt just as the burgers are finishing up.
